Mr. Blakes loves spaghetti. I mean loves spaghetti. I don’t make it very often, since pasta and meat sauce usually aren’t a part of my meal plan. But today I decided to give it a try and make a meat-less version. Trader Joe’s to the rescue. I picked up whole wheat spaghetti pasta, marinara sauce and Tofurky italian sausage. I’ve never tried Tofurky brand anything, but in the package it actually looked appetizing. I had some shredded parmesan cheese in the refrigerator already to top it off with – refer to the title #veganwannabe – but I’m sure you can find a non-dairy cheese alternative or leave the cheese completely out.
What You’ll Need:
- 1 package Tofurky Italian Sausage
- 1 lb package Trader Joe’s whole wheat spaghetti pasta
- 1 jar Trader Joe’s tomato and basil marinara sauce
- Parmesan blend shredded cheese to taste (optional)
What You’ll Do:
- Cook pasta per package directions; drain
- Slice the Tofurky italian sausage links into 1/2 inch ‘coin’ slices
- Heat olive oil on medium heat; cook sliced sausage until brown on both sides
- Add marinara sauce, and heat until warmed through
- Plate, and eat!
